Resep: Mozzarella Squares - Fried Cheese Recipe



It's just fried mozzarella cheese but in squares. I know that you must be familiar with mozzarella sticks or maybe balls? But here, it's hard to get fresh mozzarella particularly bite size mozzarella balls. Classic rules for making "breading foods", flour first, egg wash, then crumbs. Double coating is very important, also do not fry the breaded cheese right away but put in freezer for couple hours.


Ingredients:
  • 100 gr mozzarella cheese, cut in squares about 1.5 cm
  • oil for frying
Flour mixture:
  • 1 cup all purpose flour
  • 1 tsp paprika powder or less
  • salt to taste

Egg wash:
  • 1 egg
  • 2 tbsp milk or water
  • salt to taste
Crumbs:
  • panko bread crumbs
  • dried oregano (optional)

Directions:
Combine each part of the ingredients. First, coat the mozzarella with flour mixture, remove the excess flour then into the egg wash. It is important to do double coating (because it's mozzarella cheese, it will melt very quick) so put the mozzarella back into the flour, egg wash again, finally into the crumbs. 

One more thing, put the breaded mozzarella in freezer about two hours. At this stage you can keep it for later. Do not fry it right away or it will be a total mess. 

Heat the oil on medium high, make sure to put enough amount of oil to cover the squares completely or at least 3/4. Fry for about 30 secs to 1 minute or until it's golden brown. Please note that it will be done quickly so keep an eye of it.
