Resep: Perkedel (Indonesian Mashed Potato Fritters) Recipe

How do you make Perkedel ? The recipes may vary, I like mine with boiled potato instead of fried potato as the result will be nice and soft inside, similar to piping hot takoyaki. It's just great with sauteed ground beef, but classic Indonesian version, it's usually made with canned corned beef. There are two version, the one with egg coating (very common) and with the egg mixed into the dough. Sometimes, I make the mixed one, using this recipe but with extra egg so the dough won't be crumbly in frying process. Perkedel is my favorite, it goes well with chicken soup and rice, soto , or just eat it as a snack, yum!! Resep: Cilok (Indonesian Chewy Snack Balls with Peanut Sauce) Recipe

To describe, chewy savory tapioca snack balls, usually filled with cheese, beef floss, sliced hotdog, quail egg and traditionally filled with beef fat. Cilok , it's a popular street food snack in Bandung and can be found in most of cities in West Java. The common condiment for cilok is peanut sauce and spicy sambal . I made my own version of peanut sauce using peanut butter instead of ground peanuts, turned out pretty good.  It took a while for me, I've made cilok several times but I think this ratio is just right to my palate, chewy... if you like it soft then you can use less tapioca and more all purpose flour. It must be served hot otherwise it will be hard and of course not good. If you're too lazy to make peanut sauce, dip it into Japanese roasted sesame dressing, it works! A fulfilling Japanese snack, my version of Okonomiyaki with bacon and cheese. You can do it without bacon if you don't eat pork or replace it with beef bacon, most of people use pork belly but I thought why not bacon? Talking about the ingredients, you surely can add pretty much anything from chicken to seafood and for the veggies, cabbage is a must, in addition I like it with sweet corn. Some of the uncommon ingredients such as okonomiyaki sauce, dashi , aonori , and katsuobushi can be found at certain supermarket in Jakarta such as Grand Lucky, Ranch Market, KemChick, Papaya Fresh Gallery, and AEON Supermarket in Serpong. Resep: Nangka dan Pisang Goreng (Fried Jackfruit and Banana Fritters Recipe)

One of the most famous Indonesian snack, Pisang Goreng or in English, Banana Fritters or Fried Bananas . If you can fine ripe jackfruit then it's great, my favorite, also pineapple! Definitely not healthy but really I just can't say no. This recipe that I modified from my mom, she usually puts some cold butter (or margarine) into the batter, it's her secret. Rice flour and baking powder are my key ingredients for making it light and crispy. Also, I made coconut milk sauce infused with pandan leaves, perfect companion for both banana and jackfruit fritters. You can use almost any kind of banana or even ripe plantain, I find pisang uli  (I don't know what's it in English) is best for banana fritters. It's just fried mozzarella cheese but in squares. I know that you must be familiar with mozzarella sticks or maybe balls? But here, it's hard to get fresh mozzarella particularly bite size mozzarella balls. Classic rules for making "breading foods", flour first, egg wash, then crumbs. Double coating is very important, also do not fry the breaded cheese right away but put in freezer for couple hours. Ingredients : 100 gr mozzarella cheese, cut in squares about 1.5 cm oil for frying Flour mixture: 1 cup all purpose flour 1 tsp paprika powder or less salt to taste Egg wash: 1 egg 2 tbsp milk or water salt to taste Crumbs: panko bread crumbs dried oregano (optional) Directions : Combine each part of the ingredients. Resep: Delightful Toast (Sweet Buttery Baguette with Strawberries and Feta)

I have no idea about the title, but when I made this delightful dish. Crispy chewy toasted baguette, fresh strawberries, and feta cheese. What I want to bring out is the simplicity, using very few ingredients. You can use any of your favorite bread, that's the only thing to customize, also please use real butter not margarine because it's not the same. Some ingredients you'll need to make this delightful toast: bread of your choice, sliced, I used baguette butter sugar, better if you can get coconut sugar vanilla extract fresh strawberries, sliced feta cheese Mix 1:1 ratio of butter and sugar, spread onto your bread. On medium low heat, cook both side. Serve it with fresh strawberries and feta. Sweet savory sour and salty, party in mouth sensation. Ocharaka at Food Culture AEON Mall BSD City: From Taiyaki To Kakigori Still remember clearly that 2 years ago was hard to find Taiyaki here in Indonesia, but lately it's getting easier. Taiyaki Parfait is one under the spotlight, such as Tai-Parfait at Gandaria City and Pungopang at PIK. Here, it's the place for regular taiyaki. Warm fish-shape cake filled with blueberry and cream cheese, yes it's not only sweetened adzuki bean, matcha also available. Soft pancake-like texture with crisp edges.  Korean has Bingsoo , Japanese has Kakigori . Shaved ice dessert that is perfect for summer, well here it feels like summer everyday so you can have Kakigori whenever you want. Yamatoya at Food Culture AEON Mall BSD City: Super Takoyaki!! A very popular Japanese snack, takoyaki the octopus balls. To be compared with some others that I had in Jakarta and around, here at Yamatoya was my best takoyaki experience so far. It is inside of Food Culture AEON Mall not too far from Kushiya Monogatari , yes currently the hippest shopping mall in Serpong. Dominated with Japanese food tenants and the AEON supermarket also offers wide selection of sushi and some Japanese snacks. But, please do a queue at Yamatoya first then tell me. What makes it special here, the size of delicious octopus chunks, crispy on the outside, hot steamy and soft inside. It was quite addicting, a box filled with 6 balls for only IDR 29.000, pretty affordable. Hard to forget and every bite was absolutely worth, creamy batter was none like any other places. Let me repeat, creamy on the inside. The thing is the creamy texture that creates a unique sensation, melt in mouth! Here there are only few
