Resep: Perkedel (Indonesian Mashed Potato Fritters) Recipe


How do you make Perkedel? The recipes may vary, I like mine with boiled potato instead of fried potato as the result will be nice and soft inside, similar to piping hot takoyaki. It's just great with sauteed ground beef, but classic Indonesian version, it's usually made with canned corned beef. There are two version, the one with egg coating (very common) and with the egg mixed into the dough. Sometimes, I make the mixed one, using this recipe but with extra egg so the dough won't be crumbly in frying process.

Perkedel is my favorite, it goes well with chicken soup and rice, soto, or just eat it as a snack, yum!! I share this recipe so you can make your own, feel free to add your favorite ingredients, adjust the seasoning, you know, be creative. Ingredients:

  • 500 gr potato, peeled, boiled
  • 3 stalks green onion, thinly sliced
  • 80 gr corned beef
  • 1 egg
  • 2-3 tbsp flour
  • 3 cloves shallot, puree
  • 5-7 cloves garlic, puree (I like mine with lots of garlic)
  • 1/4 tsp grated nutmeg
  • 1/2 tsp mushroom bouillon or chicken powder
  • salt & white pepper to taste
Other ingredients:
  • 1-2 eggs for coating
  • oil for frying
