Chicken Taco with Mango Salsa Fresca Recipe

I love Mexican food!! From taco to burrito, and of course Pico de Gallo! Once I tried making fresh salsa using Kiwi fruit, it was yum. Rather than the classic tomato salsa, I prefer fruit salsa. Mango and pineapple are just amazing for making fresh salsa. I like it as a condiment for taco, burrito, or as a dipping sauce for tortilla chips.  My version of taco, I used chicken as protein, add some cheese, veggies, and topped with fresh fruit salsa. It's just so good, the sweetness of the fruit, unique combination, fresh, and somehow addicting, well you should try and let me know if you like it too. One Pot Chicken Rice Recipe

One of my favorite dish, One Pot Chicken Rice. It's super easy to make and most of the ingredients are already available in my pantry. I posted the video on my Instagram  few days ago, some asking me about mushroom bouillon, it's possible to replace it with chicken powder or any of umami seasoning of your choice.  I set the rice cooker on porridge / soup mode for the first 10 minutes to cook the marinated chicken, then add the rice, water, the rest of the seasoning, and later set standard cooking mode.
