Chicken Taco with Mango Salsa Fresca Recipe
I love Mexican food!! From taco to burrito, and of course Pico de Gallo! Once I tried making fresh salsa using Kiwi fruit, it was yum. Rather than the classic tomato salsa, I prefer fruit salsa. Mango and pineapple are just amazing for making fresh salsa. I like it as a condiment for taco, burrito, or as a dipping sauce for tortilla chips.
My version of taco, I used chicken as protein, add some cheese, veggies, and topped with fresh fruit salsa. It's just so good, the sweetness of the fruit, unique combination, fresh, and somehow addicting, well you should try and let me know if you like it too.
Ingredients:
- tortilla
- red cabbage or lettuce
- cilantro, chopped
- sour cream
- melting cheese of your choice
The chicken
- 300 gr chicken fillet
- 2 cloves garlic, minced
- 1 tsp chili powder,
- 1/8 tsp cumin
- 2 tbsp cooking oil
- 1 tsp sugar
- 1/2 tsp salt or to taste
Mango Salsa Fresca
- 250 gr sweet mango, diced
- 1/2 jalapeno, minced
- 2 tbsp tomato, diced small
- 2 tbsp onion, diced small
- 1 tbsp cilantro, chopped
- 1-2 tbsp lime juice
- salt to taste
